Palabok
This the 2nd time I tried to do this..and this time the taste is good enough for me. This version is without tinapa because I had no time to go to the Filipino Store to buy tinapa. Anyway I had an alternative and seeked the help of Mama Sita’s (hehehe) instant palabok mix.
Ingredients:
1 pack palabok noodles
3 tbsp. oil
1 onion
2 cloves garlic minced
2 cuts of tokwa minced (about 200 grams)
1 can tuna chunks in oil
1 tbsp. soy sauce
2 1/2 cups of water
Instant Palabok Mix
1 tsp. black pepper powder
toppings:
5 cloves garlic minced & crisped
2 stalks of spring onions chopped
2 hard boiled egg
5 pcs. medium sized cooked prawns, deveined and cut into halves.
3 tbsp. of pork crackling powder. (chitcharong dinurog)
the sauce:
-Cook the noodles, follow the instructions on the packet
-Oil the sauce pan and saute garlic, onion and tokwa until it is golden brown.
-Combine palabok mix and water, dissolve the powder and pour into the pan.
-Stir and simmer it until the sauce is thick in consistency.
-Mix in some of the squid specially the head and tentacles and set aside some of the rings for toppings.
-Add freshly ground black pepper.
Meanwhile, in a separate pan put in the canned tuna flakes and soy sauce. Cooked it until it dries out like a tinapa in texture. (this is the tinapa alternative) Disregard this if you have a tinapa.
In serving dish pour in the noodles and in order topped it with the sauce, tinapa, chicharon, sliced eggs, prawns and squid finally sprinkle it with chopped young onions and crispy garlic.
Served it with patis and calamansi or lemon.
