Tofu with spinach & mushroom
This was our dinner last night. It’s a pure vegetarian dish. The first time I did this dish was when I felt like I’m getting too much meat on my diet. My wife like this very much ever since.
Tofu (tokwa) was one of the underrated ingredients around because of its bland taste and texture. This can’t be only a partner to your old favorite pork dish Tokwa’t Baboy but with a little innovation and trick this stuff can be transformed into a mouth watering dish.
Here’s how to do it.
Ingredients:
300 grams tofu cut into desired cubes
1 pack fresh button mushroom
1 bunch of spinach
1 tbsp. Vegetable oil
1 onion minced
2 cloves Garlic crushed
1 tbsp. Oyster sauce
2 tbsp. Soy sauce
1 tsp. Sugar
3/4 cup Water
1 tsp. cornstarch
Black pepper
Procedure:
-fry the tofu until it is golden brown and crisp, set aside.(deep-fry recommended)
-combine the water, soy sauce, oyster sauce, sugar and cornstarch mix well and set aside.
-sauté the garlic and onion until it caramelize, add the mushroom and stir-fry it for a minute then add spinach together with the combined liquid ingredients. Stir continuously until it thickens and the spinach is cooked, sprinkle some pepper and add salt to taste.
-add in the fried tofu on the top and glazed it with some of the sauces.


Tofu’s a healthier alternative to pork and beef, it is also one of my favorites, but the traditional frying bores me to death. Now, you’ve given me insights into how to prepare it……. a much better and tastier way. BIG thanks!
