Plain & Simple Banana Cake
Turning overripe bananas into a delicious merienda is not that bad and it’s easy to make. This is a combination of different Banana Cake recipes that I tweaked to make it simple. Ingredients are not that hard to find and usually out of the cupboard. Serve it with a hot cup of tea or coffee on a breezy or cold afternoon. Great with cola or cold drinks too and a nice baon (packed-snack) in the office or school too.
Ingredients:
4 ripe bananas
3 cups plain flour
1 cup sugar
3 eggs
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup evaporated milk
1/2 cup vegetable oil
-Preheat oven at 175C/350°F
-Mix mashed bananas with milk. Beat in the eggs one at a time, then stir in the oil, salt, sugar and baking soda. Then carefully add in the flour and blend just until smooth.
-Grease the loaf pan with oil to avoid sticking or use non-stick pan.
-Pour mixture into loaf pan and bake for 30 mins. at 175C/350°F until lightly browned and check it with a toothpick inserted in the center comes out clean.
-Let it cool for about 10 mins. before serving.


Simple and easy to make. Good for breakfast and snacks!!!
