Herb & Couscous Salad
I’ve got my first taste on this when I was invited to a wedding where they served Mediterranean and Arabic foods. It’s a North-African in origin (Morocco, Algeria. Tunisia and Libya) where couscous is a plain stuff and traditionally served under a meat or vegetable stew. Done a little bit of research (hehehe). However, I don’t like doing that and in this recipe the main herb ingredient are the trinity of Herbs (parsley, mint & coriander). I like to pair it with grilled meats like kebabs, lamb, chicken and seafood alike. Especially when eating outdoor or at the beach on a hot summer day.
