Herb & Couscous Salad

 lutongdisyerto.blogsome.comI’ve got my first taste on this when I was invited to a wedding where they served Mediterranean and Arabic foods. It’s a North-African in origin (Morocco, Algeria. Tunisia and Libya) where couscous is a plain stuff and traditionally served under a meat or vegetable stew. Done a little bit of research (hehehe). However, I don’t like doing that and in this recipe the main herb ingredient are the trinity of Herbs (parsley, mint & coriander). I like to pair it with grilled meats like kebabs, lamb, chicken and seafood alike. Especially when eating outdoor or at the beach on a hot summer day.

Ingredients:
1 1/2 cup of coarse pre-cook couscous (available at selected supermarket)
1 1/2 cup canned chick peas
4 tbsp. olive oil
4 tbsp. lemon juice
1 tsp. freshly ground pepper
1 small red onion finely chopped
a handful of each: fresh roughly-chopped parsley, coriander and mint.

-To prepare the couscous just follow the instructions on the pack.
-Combine all the ingredients while tossing it carefully.
-Place in the fridge for an hour before serving.
-Serve with grilled meats or seafood.

Optional
My toppings: Grilled Squid Rings
300 grams large squid cut into rings
1/2 tsp. cayenne pepper powder
1/2 tsp. sugar
1/2 tsp. sugar
1 tsp. corn flour
a pinch of pepper
1 tbsp. lemon juice

-Combine all the ingredients and marinate it for a while.
-Cook it on a grill pan briefly for a minute on each side.

    i know ur in the mideast but i was just guessing where exactly :)
