Spaghetti and Meatballs

Found a new hobby which is photography and I’m hooked to it for more than a year now experimenting in different fields. Somehow I’m applying my skills in shooting foods that I’ve made and hoping to post a bit presentable food photos from now on.

Because it’s the beginning of the year, how exciting to celebrate it with something long and round to bring long life and wealth.

Meatballs
1 tbsp. fresh bread crumbs
3/4 pound ground beef
1/4 pound ground pork
2 tbsp. minced fresh parsley leaves
1 small egg
1 small minced red onion
3/4 teaspoon table salt
1 tsp. freshly ground black pepper
vegetable oil for frying
1/2 cup finely grated carrots

Sauce:
2 tbsp. olive oil
1 can (400 grams.) of crushed tomatoes
250 grams.ready-made spaghetti sauce
Salt & freshly ground black pepper
Sugar
grated cheddar

450 grams spaghetti pasta

1.Mix all meatball ingredients in medium bowl. Form the mixture into balls in sizes you like approx.into 1 1/2-inch round meatballs. You can prepare this in advanced and placed on large plate, covered with plastic wrap, and keep refrigerated for several hours.

2.Cook the pasta according to it’s package instructions.

3. In a frying pan, heat vegetable oil over medium heat, just enough to submerge half of the meatball. Dipped the prepared meatballs and fry it by turning several times until evenly browned on all sides. Transfer meatballs to a plate with paper towel to remove excess oil and set aside.

4. Heat the olive oil and saute garlic and onion until it is browned and caramelized, add tomatoes
and spaghetti sauce and bring to boil. Simmer gently until sauce thickens, about 10 minutes. Add salt and pepper to taste then add meatballs turning them occasionally for about 5 minutes. Simmer over on low flame. (Add sugar for a little sweetness if desired)

5. Mix several large spoonfuls of tomato sauce without meatballs in the spaghetti and toss until
noodles are well coated. Place it on individual plates and topped it with more sauce and 3-4
meatballs. Serve immediately with grated cheddar on top.
