Bacon-wrapped fish with veggies
Whew, been a away for quite sometime and many great things happened. We were blessed with a baby girl last April and my son had just finished his first school year KG-1. I’ve been busy as parent, employee and a hobbyist but still I ‘m trying not to give this blog up. It’s sizzling 40 ‘C hot right now in the Middle East and I had to refrain doing things outdoor and back to indoor activities which involves cooking, blogging as well as photography…..
Fish:
400 grams fish fillet or any fish of your choice as long as it’s robust
4-6 smoked bacon strips
butter
1-2 tbsp. flour
half lemon
salt
pepper
veg. oil
-cut the fillets into 2 portions about 200 grams per piece
-mixed flour, salt & pepper in a small bowl
-coat and dust-off the fillet with the flour mixture
-wrapped the fillet with 2-3 bacon strips
-shallow fry the fillets (bacon-end side down) in a 2 tbsp. of oil and a knob of butter on a low heat (this is to avoid the from burning the bacon while the fish is undercooked)turned it over after sometime until the bacon is crisp.
-before taking it out on the pan drizzle the fillet with a splash of lemon juice just enough to balance the taste.
Veggies:
a clove of garlic finely chopped
medium-size onion finely chopped
4-6 pcs. of young corn
8-10 pcs. of asparagus cut into an inch
handful of button mushroom
small red bell pepper cut into wedges
small carrots cut into diagonal strips
2 tbsp oyster sauce
1 tsp. corn flour
2 tbsp. water
salt & pepper
oil
-mixed the oyster sauce, cornflour and water
-on a high heat, put at least 2 tbsp. veg. oil in a pan and sauté the garlic and onion followed by the rest of the veggies.
-stir-fried for at least 2 mins. and finally add the oyster sauce mixture, wait until it thickens.
-add salt and pepper to taste
Serve with finely chopped spring onions on top immediately
makes 2 servings
